Cold weather brings out my inner chef.
The “feels like” is about -3 degrees F, and really, who cares what the actual temperature is, as long as it feels really ridiculously cold.
So this morning, after dropping off the preschooler, and while the kindergartener who s home with an ear infection watched Dinosaur Train from the couch, I assembled this amazing brunch. Because it’s probably my lunch, too.
I’m not sure I’ll tell my sweet husband I ate this. He already had cereal 3 hours ago. How disappointing.
But this might be the most delicious sandwich for lunch.
If you want to make it yourself, here’s how you do it:
Go ahead and cut up half an avocado so it’s ready. This all comes together quickly, so don’t be scrambling to pull all the ingredients at the last second once your eggs are cooked.
If you need to, cut up or cook up some bacon, turkey, ham, sausage–whatever you like, before you make the egg. You don’t want cold eggs.
Scramble 2 eggs and cook them mostly up in a non stick skillet with a little oil or butter or my personal favorite, bacon grease.
While they’re still not totally cooked, add some cheese. My favorite is smoky provolone. Use whatever you have, but the sharper the flavor, the better.
Once it’s all cooked and the cheese is ooey-gooey, shimmy that onto a plate to wait for a minute.
If you’re going to make this into a sandwich (gasp! What an idea!) go ahead and put bread in the toaster. If you want to go all Pioneer Woman, butter the toast.
Break up 2 slices of precooked bacon (or whatever meat you like) into the skillet.
Add the bite sized chunks of half an avocado, so it can warm up.
On the other side of the skillet (because I don’t want it all to touch yet, but because I don’t want to take an extra 20 seconds when I could be enjoying my breakfast to handle all these separately), drop a big spoonful of salsa, to warm up. Not much puts a damper on warm eggs like cold salsa. It’s true.
Once they’re all warm, shimmy all these things onto your eggs. Mix it up so you get just the right flavors in every bite.
If you’re going to sandwich it, don’t mix it up; rather, layer the bacon and avocado.
It’s pretty much the most delicious breakfast I’ve had in a month.
And, yes, it’s great as a sandwich.
Or so my husband said. About 3 times.
After he ate the sandwich in what I think was 45 seconds. And I didn’t even have fancy bread.
